SONG DYNASTY (960-1279)

During the Song dynasty (960-1279) the practice of tea-drinking changed dramatically from the boiled and salted herb of the Tang. At this time, finely milled tea powder was now placed directly into the tea bowl and whisked into a froth with hot water (rather than simmered in a pot). As seen below, the color of the bowl also changed, in this case to black, in order to show off the opaque, milky color of the tea.
