        We 
        are proud to present two special ceremonial teas grown outside the old 
        imperial capital of Kyoto in Uji - long famous for its superior matcha, 
        which continues to be the most sought-after, both for connoisseurship 
        and ceremonial use. After three to four weeks under cover, the leaves 
        are harvested, steamed and sorted, then stone-ground, packed and air-shipped 
        for maximum freshness.

        PREPARATION:.To 
        prepare usucha, sift 
        1-2 tsp. (2-4.g) 
        of matcha into a pre-warmed bowl, add half a cup (4.oz) 
        of water heated to about 150°F 
        (65°C) 
        and whisk 
        vigorously. TIP:.To 
        avoid lumps, add just enough water to the matcha to make a thin paste, 
        then add the rest and whisk to a froth.

        All 
        matcha may be prepared as thin tea by using 1-2 tsp. of powdered leaf 
        per ½ cup of hot water. The highest grades, however, may also be 
        prepared as koicha ("thick tea") - as served at a formal 
        tea gathering (chaji) - by using double the amount of matcha, but 
        only half the water. The resulting color is intense; the texture is thick 
        and smooth, and the flavor is truly unforgettable.

        PREPARATION:.To 
        prepare koicha, sift 
        2-4 tsp. (4-8.g) 
        of matcha into a pre-warmed bowl, add a quarter cup (2.oz) 
        of water heated to about 150°F 
        (65°C) 
        and blend together until smooth. NOTE:.Whisking 
         koicha will not produce a foamy surface like usucha. 
        May also be prepared thin-tea-style.
