Needle White Tea
One
of the rarest and most beautiful of all varieties, white tea is a specialty
of Fujian province. The highest quality white teas are called Bai
Hao Yin Zhen ("White Hair Silver Needles") - produced
from large, unopened sun-dried tea buds that are covered with thousands
of tiny white hairs (click photo for detail). The unique flavor is sweet,
savory and smooth. A rare and healthful treasure indeed.

PREPARATION:
Silver Needle tea may be prepared in a regular teapot or in individual
cups. Use about 2 tsp. per cup (8 oz.) of hot but less than boiling water
[heated to 80-90°C (176-194°F)]. Infuse for 2-3 minutes and pour
off if using a teapot or drink right from the steeping
cup. The leaves may be resteeped 1-3 times.
