Anxi Tieguanyin
Named for the bodhisattva Guanyin (sometimes referred to as the "Goddess
of Mercy"), the famous Anxi Tieguanyin of Fujian province is one
of China's most sought-after teas. This small batch has been hand-fired
to perfection to bring out its best flavor and fragrance.

PREPARATION:
Anxi Tieguanyin may be prepared in a regular teapot, an Yixing
clay pot, or in individual cups. Use about 1 tsp. per cup (8 oz.) of water
heated to about 80°C (176°F). Moisten the leaves prior to infusion
to release the aroma, then brew for 2-3 minutes and pour off. Anxi Tieguanyin
may be resteeped 2-4 times.
