Bao Zhong
One
of the most captivating of all oolongs, Bao Zhong (or "Pouchong")
has long been prized by connoisseurs for the beauty of its deep green
leaves and its delicate floral aromatics. Produced in Pingling (the
center of northern Taiwanese tea manufacture), our Bao Zhong is made
from large, hand-plucked tea leaves which are lightly oxidized. Their
pale yellow infusion is notable for its smooth, full-bodied richness
and lingering buttery aftertaste.

Bao Zhong may be prepared in a regular teapot, a small Yixing
pot or in individual steeping cups. Use
about 3-4 teaspoons of leaf per cup (8 oz.) of water heated to 75-85°C
(167-185°F). Infuse for 1 to 3 minutes and serve in pre-warmed tasting
cups. The leaves may be resteeped an additional 2 or 3 times. Enjoy!
