Alishan Oolong
One
of the most famous of Taiwan's gao shan ("high mountain")
teas, Alishan oolong is grown above 1,000 meters amongst the beautiful,
misty peaks of the Alishan National Scenic Area. Low temperatures
and shading from the area's famous "sea of clouds" slow
down the growth of the tea bushes and produce uniquely aromatic and
flavorful leaves. The taste is characteristically full, rich and buttery
(some say "creamy") with a long, smooth finish.

PREPARATION:
Alishan oolong tea may be prepared in many ways, but to bring out the
fullest flavor we recommend traditional gongfu brewing in a small Yixing
clay pot. Fill a pre-warmed teapot about ¼
full
with tea leaves. Rinse with hot water and appreciate the aroma before
covering with water heated to 80°-85°C (176°-185°F) and
infuse for 1-2 min. To serve, pour out into a pitcher or directly into
warmed tasting cups and enjoy. Alishan may be reinfused many times.
