Wazuka
Gyokuro
The
ultimate green leaf tea, Gyokuro ("jade dew") is shaded
as it grows in order to intensify its color and flavor. This year we
moved from Uji to nearby Wazuka in Kyoto prefecture for our Gyokuro
- which is made from the gokou ("five scent") varietal
- making it sweet, smooth and incredibly full-bodied. Brew
it with cold, warm, hot or even boiling water... we think you'll agree
this tea is amazing.

PREPARATION:
One
of the most delicate of all teas, Gyokuro may be prepared in a small teapot
or a traditional steeping cup (known as a gaiwan).
Preheat the vessel with hot water and fill with 2-4 teaspoons of leaf
per 8 oz of water. Gyokuro should be brewed with cool water [45°-55°C
(113°-131°F)] for 1-2 min. and served in pre-warmed cups. Alternatively,
use hotter water and an infusion time of 10-20 sec.
