We are proud to present two
special matchas grown outside the old imperial capital of Kyoto in Uji
- long famous for its superior tea. Shading bushes for matcha production
is believed to have begun here and Uji tea continues to be the most
sought-after for connoisseurship and ceremonial use. After 3 weeks undercover
the leaves are picked, steamed & dried before being sorted &
cut, leaving only the soft leaf tissue which is then stone-ground. |

All matcha may be prepared
as thin tea using 1-2 tsp. of tea per cup of water. The highest grades,
however, may also be prepared as koicha ("thick tea") as shown
above. Whisking 6-8 tsp. of matcha in a cup of water produces the ultimate
bowl of green tea: the texture is thick and smooth, the color is intense
and the flavor is truly unforgettable. Add a little ceremony to your next
tea gathering. (For best results, sifting
the tea in advance is recommended.) |
